Saffron is the world's most labour-intensive spice. Each Crocus sativus flower produces just three delicate stigmas, and these must be hand-picked at dawn before the sun causes the blooms to wilt. It takes approximately 150,000 flowers to yield a single kilogram of dried saffron threads — a fact that explains both its extraordinary value and the reverence in which it is held across cuisines and cultures worldwide.

We source from four premier origins — Kashmir (India), Khorasan (Iran), La Mancha (Spain), and Herat (Afghanistan). Every batch is laboratory-tested to ISO 3632 standards for crocin (colour), picrocrocin (flavour), and safranal (aroma) content. Our saffron consistently achieves Category I ratings, with crocin values above 250 — ensuring your customers receive only the finest threads available.

Understanding Saffron Grades

ISO 3632 defines three categories based on chemical analysis of colour, flavour, and aroma compounds.

I

Category I — Premium

The highest grade. All-red stigma tips only, no yellow style attached. Crocin value above 190 (ours exceeds 250). Maximum colouring power, intense aroma, and pure flavour. Used in fine dining, speciality retail, and pharmaceutical applications.

II

Category II — Standard

Red threads with some yellow style attached. Crocin value between 150-190. Good colour and flavour, suitable for food manufacturing, bakeries, and mid-range retail. More economical for high-volume applications.

III

Category III — Economy

Mixed red and yellow portions with some broken threads. Crocin value between 110-150. Used primarily in industrial food production where colour is the main requirement rather than aroma or flavour complexity.
